A SMALL, NIMBLE CHEF'S KNIFE

For a chef’s knife that is particularly lightweight and highly maneuverable, try the Shun Classic 6-inch Chef's Knife. Like all chef’s knives, it is an all-purpose blade ideal for a wide variety of cutting tasks. While the six-inch length is perfect for slicing, dicing, and chopping small to medium-sized fruits, vegetables, and other foods, many cooks prefer this smaller size for its sheer nimbleness. The wide blade keeps knuckles off the cutting board and is extra handy when transferring cut food from board to pan. With its curved belly, the Chef's knife can be gently "rocked" through fresh herbs or spices to produce a very fine mince. The Shun Classic 6-in. Chef's Knife is part of the Shun Classic line of tasteful and contemporary cutlery. The Shun Classic line features beautiful Damascus-clad blades and D-shaped ebony PakkaWood® handles. Yet behind these handcrafted knives' beauty is function: razor-sharp blades offering top performance. Shun's proprietary high-performance VG-MAX steel, which provides incredible edge retention, is clad with Damascus stainless steel, then ground and bead-blasted, revealing the flowing pattern of the layered steel. The result is a line of knives that are sharp, durable, and corrosion resistant, as well as beautiful to behold. The Shun Classic line also offers you the widest assortment of both traditional culinary blade shapes and cutting-edge designs, so you can always find the right knife for the task.

I adore this knife! I have smaller hands and many times in my life I have wished for something my size without limiting or compromising on the blade shape, adaptability or integrity. This knife isn't lighter because it's made of flimsy material, it's easily as durable as my 8". It's just overall easier to use by placing less stress on the wrist or forearm. From dicing peppers and mincing herbs to opening squash and melons; the control on this blade makes it my first choice of blade for my everyday cooking.
